Rob, Naturally, it's a bit of a guessing game what the problem is, but let me take a shot at it. It sounds like perhaps the O-ring on the pickup has deteriorated and cracked. Thus, when the pump tries to draw oil, it instead gets air. Since air flows so much easier than oil, it wouldn't take a very large crack to make this happen. Unfortunately, the only option here is to yank the engine, at which point hopefully the problem will be obvious. Another, much less likely possibility: have you verified that the oil pump is actually turning? If the key shears off on the lower cam chain sprocket, the cams will not turn, and neither will the oil pump. Good luck!
