Typing on a keyboard is easy once you remember where the keys are. What makes it different than driving a car is that your hands are in a fixed position above the keyboard (and where you can look). In a car, your hands are presumably at the steering wheel or shifter. To move your hand and find the exact button you want without looking is much more difficult than moving it to a knob which is larger and projects out more. If there are multiple buttons of the same shape and size next to each other, it requires a glance to properly orient the hand. The buttons are too small to get it right every time without looking.
Sure buttons have their place because it takes a simple motion to activate a function and many buttons can be assigned to do many things. It's the proximity and similarity of the buttons that make them not so ergonomic.
I'm sure there is some good human factors research on this.
