I think you are on the right track thinking about the 2.0T for your sitation based on your stated needs. If you are thinking of going light on the options and don't get some special incentive deal you're talking an extra $6k for less gas mileage, a rougher ride, and potential clearance issues riding on country (i.e., dirt w/ potholes?) roads. Also, when you load up a lowered car, you may bottom out sooner due to shorter suspension travel (happended to me before). It's still possible that the Aero may work in your sitation and may still be an option to consider (particularly if you plan on buying many of the options that are standard in the Aero), however, ultimately, as you have done you list your "needs/preferences" and then decide what you're willing to pay for and whether you want to pay extra cash for features that may run counter to your needs.
In my case, a base 2.0t w/ only heated seats as option met my needs very well and kept the price affordable. The 16" wheels are, IMHO, a good compromise beteween performance and functionality/practicality. I find the gas mileage adequate and wouldn't want to go lower.
FWIW, dealers can also check for cars that are being shipped from Europe to US (i.e., not yet here but "on a boat") and may be willing to get one of those for you (do a swap w/ another dealer). Given all the combinations of options, some combinations are certainly much less available at any given time (for example, dealers like to bundle the premium stereo with other premium options so few cars would be available as base w/ only premium stereo because they assume base people don't want any premium options and, of course, they also know that if you're going to pay $900 for a stereo then you'll probably pay another 2 or 3k for other things ;).
