I'm not saying that this happened to you, nor have I watched in the Denver area, but...
They lift the car, drain the sump, replace the plug, lower the car, change the filter and add 6 liters of oil. And where did all that oil in the filter housing go? Into the sump, of course.
Also, most dealers get oil in bulk, not in bottles. Most techs have an oil pitcher with a line on it to fill from the bulk hose, it's easy to put a little more into the pitcher. Combined with the above, voila.
I doubt that a half quart would hurt. Back in the day, many people used to full the C900/9Ks up to the "M" on "MAX" on the dip stick, which was a half quart or so over full. A full quart? A little much.
