The majority of the issues you're dealing with are pretty straightforward to resolve--you just have a list of projects to check off. If you're handy, most of this stuff is quite DIY-able.
AC is pretty straightforward, really. Even in the midwest, I consider broken AC a major hassle. A bit spendy to have done, but still DIY-able.
The seats: You're probably better off hunting for a set of used seats or skins to swap in (guessing it's the fronts that are toasted?). Sheepskins for now, and keep your eyes open for skins or a set of seats? Door lock actuators: Used ones are probably easiest to find; however, eSaabparts now offers remanned actuators.
Blend door chatter: Part of the charm. ;-)
ECM: There's folks out there who will clone your current ECM coding onto another used one, making it relatively plug and play. Otherwise, eSaabparts also has reman ECMs and cloning service available.
Given what used cars cost these days, you're likely still money ahead addressing the paint and the other issues -- mechanically it sounds like it's very solid, it's rust-free, and it's a known quantity. The insides of the motor probably still look like new, even at that mileage. Give it some love and keep on rolling.
