No one can promise a set price before the engine is opened up or they might promise such a high price that whatever is found it's covered under the original estimate.
Your Saab indy might not be aware of that it is valve guides available for the V6 engine or he might not have a reliable machine shop nearby to do the valve job and therefore it is to much work to repair the heads. Being in LA makes it easier since you have whatever you can think of just blocks away.
Yes, it is a chance that the valve plate has broken off and the valve stem have punched holes in the pistons but you will never know until the heads are off.
You should also have the engine oil cooler resealed. The aluminum lid have a tendency to start leaking coolant after some years and also replace the coolant thermostat.
