The ECU sees the intake temperatures and reacts to this directly or indirectly to avoid knocking. The result is retarded ignition settings. As for amount of charge air mass flow... watch the boost indicator.
When a T7 increases boost to maintain targer air mass flows in hot weather, the turbo works harder and the intake temps have to increase as a result. The increased boost effort requires more power from the turbo's exhaust driven turbine. That inturn requires that the wastegate be more closed. This leads to a higher exhaust manifold back pressure which directly reduces shaft HP. The T5's systems were worse as there was no effort to overcome the lowered air density and what you got was hot less dense air at target pressure. The T7's target of a mass air flow rate is a much better solution.
The effects of compressing hot air and getting high intake temperatures might be creating some trionic-octane issues. Are you using premium fuels? Colder plugs might help, as well as greater gaps as opposed to smaller ones. Fouled injectors with poor spray patterns and combustion chamber deposits might easily come into play under these conditions.
As for boost delay, a SMBC might help, but do not jack up peak boost pressures. A low restriction air filter would help, but with the dust one can get theree, one needs to know that filtering is effective.
