When I bought my CPO'd Aero about 2 years ago, the selling dealership's invoice for the car had written on it, "Saab Certified 6 Yr. 100K from original in service date," and then the date period written right there. I had found the car on Saab's CPO website, so although this didn't look very "official" to me, when I checked the VIN at my local dealer, the Iris report showed the CPO status and correct dates. I would hope that your Dad's sales invoice is about the same.
I am not sure if it is routine for the selling dealer to give you a copy of the CPO checklist or not - others here will know, for sure. If it were me, I'd just call Saab national and have them verify the CPO status of the car.
FWIW, I never had to do anything in terms of showing any paperwork for my local dealer (I had bought the car out of town...) to do whatever warranty work was required. Once the CPO status is in the Saab computer system, it's all pretty much automatic.
