My Supra was behaving similarly when it blew a head gasket (leaked exhaust into coolant). Started small but eventually it got so bad that it would start boiling and spitting coolant all over the place after the engine shut off. The reason for that that exhaust would form an "air pocket" at the top of the engine. A part of the engine would not cool properly and after the shut off that heat will transfer to the rest of the engine, and raise total temperature.
How does the coolant look? Is it clear? There are some cheap "litmus test" kits that would test for traces of exhaust in the coolant.
Just another possibility.
