It's definitly a "Saab Thing". My 2000 Aero wagon has it, but so too did the 99 base model sedan I also looked at which had velour seats - in fact it was even more noticeable in that car (in fact a little unpleasant). Buggered if I know what it is, it's certainly not from the leather seats, but as many have found, you don't notice it after a while.
I was recently away for six weeks and I smell it again for the first few drives, but not after that. In my car it is not unpleasantly strong, and in fact I quite like it. My GF who had a 99 (as in the model) years ago notices it when she hops in after a while, says it's the same smell her car from the 70's had, so I guess "they're all like that mate".
My guess is that the cocktail of hideous "hooker diesel" type "air fresheners" you would have to put in the car to overcome it would be far worse than the original smell.

PS In Australia we have a famous type of waxed-cotton waterproof coat called a "Drizabone" (ie Dry as a bone), the "Saab smell" is very much like the characteristic smell of those coats. So much so that when I test-drove the aforementioned 99 sedan I thought the guy might have been a travelling rep for Drizabone, the smell was so intense.
