I use 195/65R15 for my snow tires (leftovers from my 9k). A tiny bit lower than stock but work fine. You can't use 15" wheels on the Aero as the larger brakes won't fit inside the wheels.
You can use the miata.net tire size calculator to compare stock size with proposed winter tire size to see how the height will compare.
