A malfunctioning oil pressure sensor could cause the warning light to come on.

The oil pressure sensor is a switch; its' function is binary, it's either closed or open. Hence, it will not provide a range of readings....only one. Normally, it closes when the oil pressure drops below 6-8 PSI.

You're right that a failing switch, one closing at normal oil pressure, would be of no consequence. However, the odds are that you have a serious oil pressure problem. If you wait a while and the engine fails you'll know (without spending any money) that the switch was giving a valid indication. Then, you may have to replace a ruined engine....but you could reuse the switch.
