coolant actually lowers water's ability to remove heat, so you are fine running with 100% water during this process. no danger of over heating at all.
one point to consider: your method strikes me more of a "rinse" rather than a "flush". The flush procedure is intended to move as much volume of liquid through the system as possible. the idea being that it will carry away the particles with it.
I prefer to use a garden hose and the "prestone backflush tee". I've used that on all my saabs (900, 9000 9-5). It moves a lot of water through the system at a high rate, and is more convenient than the Haynes procedure.
But, if you are concerned about using tap water (a valid concern) how about this: First fully with a garden hose. then "rinse" (your above procedure) with distilled. That should get out the traces of tap water.
