Check the fuse 14 UNDER THE HOOD - it's a common fuse for both A/C compressor and Theft Alarm Siren. You might have removed it because of alarm problems (or someone did) and now you don't have A/C compressor.
You're also right that there is a pressure sensor in the system and compressor will not kick in if all freon leaked out. Finally, compressor clutch or compressor itself might have failed requiring replacement.
