Capacity for the system is 875 grams, or 30 ounces. If you're using 12 oz cans, then you've over-filled.
The expansion valve is a common failure point, and really ought to be replaced along with the receiver drier when you've had a failure of the AC system.
Also, if you ran totally out of coolant, then it's been replaced by air in the system and should have been vacuum pumped prior to replacing refrigerent. A properly evacuated system will hold -30 hg vacuum which will suck in the first can rather quickly.
If air entered the system then moisture entered as well. Moisture combined with refrigerent forms a highly corrosive compound that will rot your AC system -costing you potentially more than a new expansion and shrader valve.
