Some short answers:
1.) Polyurethane bushings tend to squeak a lot unless you lube them properly at installation time and whenever the squeaking gets to you after that. Price difference is not that great, performance difference is huge.
2.) Just replacing struts alone won't lower the car. The springs dictate how high/low the vehicle will sit. The struts/shocks determine the damping of the springs . . or how long they will continue to bounce after hitting a bump.
3.) Yes . . . . but it's not that big of a deal. However . . if your indy is in there anyway, and you trust him to work on your car, it's probably the most efficient solution to let him do the whole thing.
Your biggest responsibility is to choose the suspension components that you want and with which you will be most comfortable in the future.
I've done a bunch of suspension work on Saab 9000 and 9-5 and other makes so this is my 2 cents. Best of luck to you.
