One problem behind this is that you are not dealing with an analog, mechanical reasoning behind your temp gauge behavior.
It is all run/displayed by what the programmers decided to implement into the computer running the temp gauge.
So part of the problem is that when the temp gauge computer receives signals from coolant temp sensor (or actually another computer) that is not plausible and not in line with what the preprogrammed values are for that time after coldstart, it can and will display just about any random numbers on your temp gauge, like dropping dead and so forth.
Also, the reason why you don't get any heads up on an impeding problem is that the gauge is also preprogrammed to stay in the middle over a wide range of temperatures and then suddenly jump up to the next threshold level if temp rise even further.
Those value though you can adjust using the Tech 2 to make the temp gauge more lively and display actual temperature.
So a lazy coolant thermostat could very well create a temp gauge display as you see it. But it could also be an electrical glitch somewhere. That's why I would have to use the Tech 2 scanner to check the coolant temperature at different computers like Trionic, DICE and MIU to see if it is the same reading at those places.
