In regard to the mpg there is probably no real significant difference in fuel economy between the years and models especially if you drive with restraint. The EPA revived they way they calculate about this time but real world mpg should be comparable. In '06 the Aero is called the Sport. For '06 models it is the same engine Sport/Aero and Base and same wheels/tires so no real difference there.
The leather is probably fairly characterized as down-graded in '06. However, '06 supposedly was also a significant suspension revamp and other minor changes that should have worked out some of the earlier 9-5 issues. If you put any faith in CR ratings the '06 has stood up very well. They give the '06 a much better than average (their highest) rating on the used-car verdict summary and the same is true for most of the individual trouble spot areas (exceptions are fuel, power, and climate systems which rate average; the audio and body integrity rate a better than average).
I seriously considered the Passat but was leary of reliability especially since '07 was first year for the new model.
