I get about 195F when cruising, then it warms up to 200F-208F after you stop the car. Once I went back to the car in the garage and turned the ignition ON but didn't start, just to get the reading from the scangauge and it was as high as 213F.
When my coolant bypass valve was leaking a few weeks back it was fluctuating +/- 10 degrees (but not enough to move the needle on the instrument cluster, I was monitoring it digitally) but since I replaced it, no more fluctuations.
I have the v6, if that makes a difference.
