Vehicle suspensions are designed around tire capacities and ratings so you are wise to maintain a high speed rated tire on your Aero. But a Z versus a W versus a V is insignificant for US highway travel.
My curent summer tires are V-rated Cooper CS4, an All-Season Touring tire. Previous to these I had Cooper Zeon Sport A/S tires, W rated All-Season performance tires. The V-rated touring tires have a softer sidewall than the W-rated performance tires. Handling is less crisp but comfort is higher. Noise with the CS4's is less too.
What I am trying to say is that although you may experience a difference in your vehicle's driving feel by going to a slightly slower speed rating, a V (and maybe even an H) "should" still be sufficient for your driving needs. How crazy will you be driving in a 7-year old sedan?
Laws in Eourope are different and cars must be shod with replacement tires that match the vehicle's speed capabilities. But they have the AutoBahn too, where speed are/were limited by the vehicle's capabilities and not ordinances.
