Just dealt with the same thing on my 2003 9-5 Aero, 90K miles. I changed the thermostat and temp sensor. It has been over a month now and the problem has not come back. I went ahead and replaced the upper hose as well, since this was a good time to do so. Inexpensive and easy fix.
