The valve sizes and spring rates are not something I delved into. My original motor was totally sludged so I had the head cleaned by a machine shop and had new guide seals put in. I've not heard from people who have done this that they've done anything but keep the head completely stock. You might ask some of the people on the performance board about the valves or maybe someone here can chime in. You do benefit from the much stronger pistons when it comes to bumping the power through software, turbo changes etc. I'm running my 1999 2.3 on E85 with different software and so far, knock on wood, it seems very happy. And quick.
