What happens is that the temp gauge is not really hooked directly to the sensor. the computer tells the gauge what to read. So the computer has a little routine....... for example if the oil temp reaches a certain temperature and withing 5 minutes or so the water temp is less that 185 [or something] then the gauge drops to 0 and trips a CEL to warn you.
If the thermostat has not been replaced in 60 to 100,000 miles ....that is the problem. It is sticking open. Long shot that it is the temp sensor. But the sensor in $11.00 at eeuroparts.com and is a 19mm deep socket quick job to replace....most people do both. Thermostat usually the problem!!!
