The thermostat modulates to maintain a specified engine temperature.
The coolant sensor detects this temperature and send the signal to the ECU and/or BCM where the information is used to control engine settings and sent to the dashboard read out.
The dashboard readout is not a direct indication, but rather is a "normalized" indication. The default setting displays the needle at mid-point for any reading from 30% to 70% of scale (IIRC). With a Tech-II it is possible to change the readout to a more direct signal.
Your thermostat is new, so I would try the temperature sensor next. But is there any reason to suspect someone may have changed the dashboard readout from normalized to direct without your knowledge?
