No. The keys will not work from a 2000 in your 2005.
In around 2003, Saab changed the PHYSICAL part of the key that goes into the ignition cylinder. The ONLY key blank that will fit is a 2003- remote head key. Earlier keys will not turn the cylinder, and cannot be cut to work in the later car.
Just look at the keys side by side.
Electronically, the transponder chips and the remotes (both the "banana" and key-style) will work with any year car in the same market (e.g. US or Europe).
You have to get new key blanks cut to your VIN from a dealer or independent that works with a dealer. You can then buy any remote key off ebay for a US car, remove the guts, and install in your new head. Then you have to get them programmed to the car. You save some money, but if you're going to end up taking it to a dealer for programming, it might be better to just buy the whole key & remote from the dealer, as you might be able to guilt them into programming them for free, since you're paying upwards of $100 per key.
I would have at least two spares, all programmed to the car.
And remember that programming is an all-in deal. All keys you want to operate the car must be present. Any missing key, even if previously programmed, will be forgotten once the new programming starts.
