this is mainly for someone who searches this like I did...
19mm deep socket fits right over the whole sensor! You need to have one that has the hex the full depth, not just partial depth with a round hole beyond that... with that, there is no need to even remove the rad hose... easiest part of the job (and way easier than wrestling with those 4 bolts to remove the t-stat housing)...
however, I do agree that changing both at once usually makes sense, and much of the work is draining and refilling the system. Anders' tip to lubricate the green valve with WD40 was what worked for me. That valve is a pita! a 21mm socket fits over it, but there was no room to drive it, so I ended up working it by hand as intended... without the WD-40 it would have been hopeless!
