the hardest part is draining the coolant. be careful with the petcock.
the sensor is super easy if you have an appropriately shaped deep socket (iirc 22mm?) - goes right over it and you can change it in seconds, no need to disconnect any hoses. nothing gets easier to do than that... but if you drained the coolant, you might as well do the tstat (and any other concerns) at the same time.
you also do not need to disconnect the hose to do the tstat. finding the right combo of extensions and sockets and u-joints for each pair of bolts took me a little time... I think in the end, I did it without ujoints but I might have used a flex head ratchet... it's good to have a few different options there in the toolbox - I still don't have enough to always make jobs fast, but can usually get it done... I pick up a few new ones with each new project...
