I wouldn't describe dexcool as pale. I have a bit of the mixed stuff in a mason jar (the car was overfilled for both the coolant and atf when I bought it) and I would describe it as bright orange. I wouldn't want to drink beer that colour... well, er... maybe not anyway... maybe yours was more diluted or dirty or something?
Mercedes coolant (G05) otoh is actually a light golden yellow colour when diluted... almost looks like pee... or possibly a diluted light coloured beer... (again, not beer I would be that interested in)...
Anyway, I just thought I'd mention it in case that was an issue. maybe the dealer really diluted the dexcool. are you in a northern or southern climate? We have to endure -40 degrees occasionally here and need a 50/50 mix, so that might skew things...
fwiw merc coolant is not that expensive, about the same as other stuff even right from the dealer... but they don't have sales, and availability is not quite as good (you need a merc dealer or a store that stocks G05, ie not walmart most likely)...
