OK, a few answers for ya.
Surface prep is everything to maximize durability and shine of Zaino. Since you didn't clay or polish or Dawn wash prior to your first use of Zaino, I suggest you "start from scratch" and do the process correctly. Now, does this *have* to be done? Well, no. It's your car and is totally up to you. If you are happy with the looks and protection you're getting now, then it's OK by me.
Can you just add more coats of Z5/Z2 whenever you want? Sure. As long as you wash the car thoroughly and remove any stains and scratches, you can apply as much Z as you want to.
My personal suggestion for a Zaino strategy is to do TWO full details per year, starting from scratch. That means Dawn wash, swirl removal, polishing the paint, then Z5 and Z2 as much as you like. If you do this in the fall and late spring you'll have all the protection you'll need for summer and winter.
