5th gear is used.
Shifts aren't actually more abrupt, though it does change gear amazingly quickly with practically no boost or rpm drop off in between gears when you are gunning it - which makes it better than the manual in my opinion, as the power delivery with the 5 spd auto is continuous all the way up through the gears, unlike with the manual - change, lose boost, build up, change, lose boost....
RPMs only hold on if there remains torque demand on gearbox. It is also possible to drive it gently in sport mode and hardly notice the difference, apart from the quick throttle.
Fuel consumption change is all down to how the car is driven. If you demand it, it will hold revs all the way up to the redline, if you don't, it will change naturally at lower rpm.
