In general, if the oil cooler itself was leaking, you would have had the brown milkshake prior to the repair. My bet is that the shop (non-Saab you said) found the oil cooler COVER leaking -- which would manifest as an external coolant leak. The oil cooler itself leaking, would cause an internal leak (oil into coolant - most common, or the reverse - coolant to oil).
The foaming issue, after the repair, could go a few ways. If its brown, looking like a chocolate milkshake, it is now likely that oil has found its way into the coolant, from a leaking oil cooler or maybe fittings that connect the oil lines to the cooler. This may have been disturbed when the cover was removed , and its very important to use new o-rings when refitting it.
If it doesn't look chocolately, then KW's suggestion about mixing coolant makes sense. The orange Dexcool doesn't like to be mixed with non-compatible coolants - even just for top-up.
KWs suggestion of a mechanic that knows these V6s is sound -- Saturn and Cadillac (in the Catera) used the same basic engine, and if you search the board, you'll see discussions about using the beefier GM version of the oil cooler itself to replace the Saab version -- at a lower cost as well.
