H = 210 kms/hr
V = 240 kms/hr
How fast do you want to go?
I'm not a tire engineer, but your logic sounds reasonable to me, IMO though either speed rating is a good choice. If you think you'll regularly exceed 210, then go with the "V" rated tires.
I have a question though. If you would be getting the same tire on the Borbet rims, how could it be "V" rated? From what I've found, the Conti's are "H" rated in the 225/45 R17 size, I'll assume that its the same or lower on the 16" size.
