Texas and Kansas...they are sadly misled. Sure, lets get off the oil thing. First, it has to be PORK, not beef. To have fun cooking "Q", you get drunk twice..You wake up at about 4:00 in the morning, fire up the pig cooker (usually towed behind a big 'ol pickup) and start drinking. When its ready, then throw at least one half of a pig (that's right, sliced in half down the spine from head to tail, so you have two legs, one set of ribs, etc.) on it, drink for awhile longer and make sure the fire is right (hickory of course). Then pass out, let the pig cook for about 8 hrs or so, baste occasionally, wake up, check the pig, and start drinking again (advised for weekends only :-) . The result is fall-off-the-bone tender pork BBQ that is heavenly. You reach over to the pig and pull chunks off (that's called pulled Q). You can also take the meat and chop it up (chopped Q), but I don't care for that, too many lips and @ssholes) That's western NC BBQ (vinegar sauce based). The heathens in eastern NC think theirs is the best (mustard sauce based...fools). Of course I don't cook it, I just like to eat it. Lexington NC is the capital.
