Which cassette adapter are you using?
I bought the Sony CPA-9C (from Best Buy) to use with my iPod and it sounds fine. If you're using that one, and it sounds bad, you might have to exchange it (perhaps the head is out of alignment). I believe some of the other more expensive cassette adapters have an azimuth adjustment so you can compensate for a slightly out-of-alignment tape deck. Some other cheaper cassette adapters do not work well because they sometimes have built-in bass or treble boost, which cannot be defeated.
The iPod's headphone jack output is a little weak, so you have to set it at about 75-80% of maximum volume, but not too high or else you get distortion. I read that the newer iPods have a proper line out jack; if that's true, you might want to try and exchange your unit for one of those.
I leave the iPod's equalizer disabled.
For absolutely the best MP3s, use the EAC/LAME combination, MusicMatch is trash!
