I recommend changing all 4. The suspension deflection changes the side force. If one end responds differently than the other, you will either have more or less understeer. I once changed the front (springs and shocks) on a C900 and the car was "squirrelly" until I got the backs in synch.
I'd recommend OE shocks. The difference between "cheap" and "expensive" shocks is the quality of materials (leads to longevity), the level of research done to build valving which matches the suspension. OE shocks are developed out of a great deal of study and experimentation. Aftermarket generally try to come close to OE without having to go overboard with new or different parts as compared to their more popular shocks. But aftermarket shock manufacturers often feel the need to produce "stiffer than stock" which makes the ride worse and sometimes the handling is worse too. Koni are adjustable, so they usually can be set close enought to stock to provide equal results. There's nothing special about the installation of Saab shocks and struts ... any competent shop sould be OK. I can't speak to whether your local chains are competent, but consider that by giving the "easy" jobs to your Saab guy you help keep him in business, so that he's there when the "hard" jobs need done.
