As Engineer, I agree with you 100% and recognize exactly what you are saying.
My mechanic does not turn rotors (besides mine) because by the time he pays his worker to take them off, turn, put on, etc.. its cheaper to buy new ones. This is for most domestic cars.
You can buy new 9-5 rotors (aftermarket) for a non-Aero Saab for 45 bucks.

In my case, I was in front of the mechanic turning them with a pair of calipers measuring the runout, thickness as it compares to new and lastly we balanced them. If I had to pay someone this would be cost prohibitive.

For most cars GM does not tell you to replace NOR turn rotors with first set of pads. My mechanic showed me this in the repair manuals. Just put on pads the first time and let the pads conform to the worn rotors. This is how it was done and IS done all the time currently.

As to my current situation.... since the 9-5 brakes systems are prone to premature wear I was too cheap to spend (190 bucks per AERO rotor, no aftermarket available) and I will be turning this car in at end of lease, I know the guy will not measure the rotor thickness at lease inspection.

The car stops fine and have been running this way for at least 10K miles abnd I got away with a cheap brake job for WHCIH I should NOT have needed at 30K miles. I would have NO problems spending the money if I was in the 50K range for pads/rotors. My last Saab went all the way to 85K miles before new rotors and the SAAB dealer did turn those ones. It was a 1996 900SE with most likely thicker rotors to begin with.

Oh well..

Happy saabing
