Well, where can it go?
1) leaking head gasket... coolant is consumed in the cylinders. You would see a cloud of white smoke on startup.
2) leaking water pump... the coolant seeps from the weep hole in the water pump due to a faulty seal. You would see a puddle of coolant under the car each morning
3) leaking hose or radiator... you'd smell coolant after stopping the car. You'd see white deposits on the radiator, or spot a dripping connection on a hose with the engine running.
4) a leaking heater core... you'd smell the sticky sweet smell of coolant when you turn on the heat.
Have the dealer do a 'leak down' to test the head gasket, and a 'pressure test' for the other components.
This type of problem is not unique to Saabs, and any competent mechanic should know how to fix it. If the car has been in 5 times to the same dealer, you might try a different dealer or independent shop.
