On a 9-5, 2 quarts low means you only had 2 quarts left. When driving highway miles, there is plenty of oil pressure in the system, so I doubt if any permanent damage was done.
You should watch the oil level closely now. I do about 600 miles of highway driving a week on my '99 9-5 with 97K miles, and it does not burn any oil at all. I never need to top it up between 6K mile oil changes.
I imagine a newer car might consume oil due to the increased friction from a new tight engine, so that might be it. But be careful to check it every fillup or so.
BTW, is there any sensor in the car for low oil level? I recall someone posted here that you could turn the ignition to "ON", but not start the car, then wait to see if the oil light goes out. That would test the oil level and the light would stay on if the level was low. I tried to find that tidbit in the owner's manual, but couldn't find it.
