Yeah I used to wonder about this too, and thought up some crazy ideas like the AC was cooling the intake air or something (!) but obviously that's incorrect.
More than likely it's because there's less resistance in all components due to thinning of the lubricants (transmission oil, wheel bearing grease, etc.) and also, the engine warms up more quickly.
Also, in the warmer months, we get better gasoline.
During winter time they add "oxygenates" like MTBE or ethanol, which has the side-effect of reducing the amount of energy available in the gasoline.
They say this oxygenated fuel reduces emissions, but then we have to burn more of it!
