Where is my oil going?!?!

Ok...this is the second time this has happened to my SAAB. First time was at my 10k mile service before I drove from Denver to CT. Had service and oil change done...got to CT, started up the car and heard a horrible valve tick. Brought to SAAB of Westport and they said that there are no signs of the car leaking oil, or burning it for that matter...but there was only about 2 quarts in the car. Their conclusion is that the dealer in Denver shorted the oil.
As some of you know from my post the other day, I need a new evaporator for my a/c. Was coming home last night and on the road I was driving, there were cement walls on both sides of it and I heard that darn ticking again. Sure enough, checked the oil and it was way down. Had it changed at 14,640 miles and I literally just rolled 16,200 last night. Not even 2000 miles and the oil is way low again. No signs of smoke, no signs of leaks, can't smell anything, can't see anything...nothing in the coolant either. Also have had the PCV fix done to the car.
I am completely baffled here. Does anyone have any light to shed on this? I could understand if I was 1/2 quart low and it was burning....but the dipstick isn't even wet.
