Overheating: Faulty Temp Sensor?

My '99 9-5 V6 overheated in traffic this morning, but the temperature gauge didn't alert me to this until it was too late. I checked under the hood and the coolant was bubbling, but the level was fine. I've been reading other posts and am wondering if it is the coolant temperature sensor. My A/C hasn't been working lately, could this be related to the temp. sensor as well? Is it easy to replace the sensor myself or should I get Saab to do it at their inflated prices?
