In dry conditions, wider wheels give better handling; it's the opposite in deeper snow, a narrower tire is better. I think in slush and mess and wet, it's more a matter of compound and tread design.
I have the 16x7.5 Borbets and notice the same thing about look, they're fuller and do hang out more than the OE Klingons that my Aero came with.
Winter tires also do look fatter because they don't have the stiffest sidewalls. My Dunlop Winter M3s are only 215s, but if you sit them next to, let's say, a Conti all-season 215, they look substantially bigger and give lots of rim protection even on a x7.5 wheel.
You might check TireRack's technical info for track width, every make/model of tire has different dimensions even for the same size.
The bolts I got for my set are slighty longer than OE, and because of that, they can't be used to mount the spare (intrude into parking brake hub, locking the wheel). I don't know if yours were longer, but keep a set of OEs with the spare anyway, just in case.
