You should change the coolant annually, anyway, Cory, but if you just changed it recently and don't want to replace all of it, then it's =possible= to change the thermostat without draining it all out. I did it once on a friend's Saab.
Open the reservoir cap to remove pressure from the system, siphon all you can out of the reservoir into a clean container, and then put a large pan under the engine to catch what runs out when you remove the T-stat housing. Open the bleeder nipple first and then take the T-stat out. You'll lose a little coolant, but not much. After you put in the new T-stat, re-fill the reservoir and bleed the system -- you'll probably find you've lost less than a pint (or half a liter) of coolant when it's all done.
As I said before, I did this once on a friend's Saab -- sort of an emergency road fix we did in a hurry. But when I replaced the thermostat on my own Saab, I did a complete coolant drain and filled it with new coolant. Coolant isn't that expensive, and the job doesn't take too much longer, so again, if it's been more than 6 months since you changed it, I'd recommend you drain it and replace it when you do the thermostat job.
