As tlrm states, that white sludge is water mixing in with the oil.
Normally, air is pulled into the crankcase when the engine cools off. If there is moisture in the air, this water condenses and forms that white sludge. Once the car warms up, this water boils off.
The sludge becomes noticeable if the car is being driven on very short trips, where the oil doesn't really come up to temperature, or if you check the oil when the engine is cold, has been sitting a while, and especially if it was a cold, damp evening.
Do you notice a loss of coolant, or white exhaust after the car has warmed up? If so, that could be a sign of a head gasket problem. But if you've been doing a lot of short trips lately, I'd just say it's condensation.
