What you'll hear with a bad pinion bearing is a whine, most noticable above about 30 mph in 3/4/5. You'll hear the whine most when accelerating, some when slowing, and least when there's no load. It's not necessarily very loud, but is fairly distinctive. The pitch changes with road speed. What it sounds most like is the differential whine that we used to get with rear wheel drive cars and old Ford pickups.
Other sources of whine are often tied to engine RPM, and include bad bearings in the alternator, water pump, AC idler pulley, etc.
