Well I'm not Greg D but I will pipe in here anyway :)
I converted my '84 Turbo from auto-to-manual and wrote the website that is now hosted by The SAAB Network. The conversion is not easy and it's not hard. It depends on your experience level and patience. I am an amateur mechanic with ordinary hand tools. I have a 1-car garage and an engine hoist. I was able to complete the entire conversion in 5 weekends at a very leisurely pace. It was challenging at times, but I think anyone with basic mechanical skills can do it. You should know how to use a torque wrench, dress gaskets, clean parts, and follow assembly/disassembly procedures without taking any shortcuts. If you don't know these things, dont sweat it, its not that hard to learn and an old SAAB is a perfect classroom. It is important to document everything carefully and to have a certain amount of supplies that I listed on the website. A Bentley manual is a must. You must be prepared to get dirty, perform some tedious tasks and occasionally get frustrated. Knowing how to swear in Swedish does help! This website is a very valuable resource and I came here often when I got lost and always got an answer. Patience and persistence is the key, there is no rocket science. Good luck.
