Couple things... I've got a 745T auto as well, and it's gearing is decidedly different from Saabs all the way around. I suspect one reason for this is the fact that the 740 has a 15% larger engine and makes more torque at lower engine speeds... The 900 2.0l simply doesn't have enough Go to make it competitive with the 740 in that respect.
As for freeway speeds, it will completely depend on the specific 900 and the model year - Saab tweaked the gearing over the year. 75mph on a 900 could translate to anything from 3500rpm (on an earlier car) to 3000rpm (on a "CAFE" car) and anything in the middle. Best bet is to get a copy of the gear ratio chart when selecting a donor 5-speed - Larry West indicated he was going to try and get the spreadsheet on his website (http://www.saabturbo.com) at some point in the future, time allowing.
In *general*, trannies up through '87 or '88 should have the shorter gearing, leading to a 3500rpm@75mph cruising speed, cars from '87 to '89 with the taller gearing will turn about 3000rpm@75mph, and later cars will have something roughly in the middle... This is based on my Saabs - ranging from an '80 5vT to a '90 SPG and just about everything in the middle.
