Starting and Idle problems, cooling

Car: 85 900S
Recent work: new machined flywheel and used starter. Naturally, I took out the clutch and also bled the clutch hydraulics. Replaced the cold start injector and thermostat this past winter.
The car has been sitting for quite a while so I'm not sure how long it's been going on.
Here's the symptoms:
Car is cold (e.g. sat overnight): Starts up quickly (1 second, tops 2) and idle (~900-1000 rpm) seems normal for the car (might be low though).
Car is warm (e.g. Got up to temperature then sat for 1-4 hours): Starts up immediately but idle quickly drops. It then hovers in the 300-400 RPM range before it dies. Giving it gas results mixed results: Sometimes it runs freely to 3500+ RPMs without a problem other times it stumbles and won't get much over 1000 RPMs. In any case, it usually dies at this point. I can restart a couple times or try to keep the RPMs up. After a minute or so the idle goes to normal and I can drive without problems.
Car is hot (e.g. turned off for 15 minutes): Starts up immediately and runs perfect.
Also, unless on the freeway, the temp gauge is moving to the 75-80% range where the fans kick in and it might drop to 65% or so. It repeats. I believe this to be a separate problem but maybe not.
