Yes, you are looking at the thermostat. That thing with two prongs is a temperature sensor/switch.
I do not recommend removing the thermostat. It will not help your car run cooler. If the thermostat is operating properly, it opens at the normal operating temperature of the engine and sends coolant to the radiator. So except for a little extra restriction, it won't make the engine run cooler in hot temperature. If the thermostat is getting old, or is the wrong temperature, then it would help. But again, don't remove it, replace it.
I recommend you use an 82C thermostat - that will help the car run a little cooler, and is still fine for winter.
Running without a thermostat has some major drawbacks. The engine is designed to operate at a certain temperature, and the thermostat helps with that. If you don't have a thermostat, the engine will run MUCH cooler than the design temperature for most conditions, like highway driving. It will also warm up slower.
What are the drawbacks of running the engine too cool? Many. First, oil may never get to the temperature hot enough to boil off water from condensation. That extra water in the oil corrodes engine parts. The clearances are off when the engine is colder than designed, so lubrication doesn't work as well, and wear is increased. Believe it or not, the engine will produce less power (not a lot, but some).
The purpose of the thermostat is to get the engine up to operating temperature as fast as possible, then hold it there. Running cooler than the design operating temp is bad for the engine.
