Yes, it can be done, and not that hard to do... but lots of work. I recently did a base 900 and got rid of the AT after finding a good rebuilt 5-speed. I was lucky in that I needed both engine and trans, so did not have to separate, as that takes a little more time. A doner car is a big help, but since many of them are junked due to bad trannies, that could be difficult to find. First... look up Mark Jeter's web site (http://900conversion.saabnet.com/) which is an excellent overview that I used myself as a reference.
Looking back at your post, I see that you want to swap the 87 into the 89. You will probably want to have the 87 trans rebuilt first, or swap it for a rebuilt one, as 200k seems to be toward the end of their useful life, plus the 89s may have had a little stronger trannies. The 87 would be a perfect doner car though, and would make it all easier. Get some help from a local club (where are you?) and with a hoist and some tools you could possibly do it yourself.
